- Ingredients:
- One large ripe pineapple.
- 3 table spoons honey.
- 1 table spoon freshly sqeezed lemon juice.
- 1-2 tea spoon freshly ground black pepper.
- Method:
- Trim, core and peel the pineapple.
- Cut into quarters and slice out the core trim from each quarter.
- Cut each quarter into 4 pieces. 2 pieces lengthwise and 2 pieces crosswise.
- You should now have 12 wedges of the pineapple.
- Now mix honey, lemon juice and black pepper and brudh them to glaze on each slice of the pineapple coating compoetely.
- Preheat Barbeque grill. Either spray oil or non sticky cooking spray on the groll rack.
- Place the pineapple wedges on the grill and cook for approximately 4 minutes on each side turning them so that the grill marks are on all sides. Cook until the pineapple becomes fragrant and starts to dry up. Don't over cook as they will turn mushy.
- Remove them from the grill and brush them with any additional glaze one more time.
- Serve them and enjoy.
